Lemon Basil Tartar Sauce:
1 cup mayonnaise
1 Tbsp lemon juice
1 Tbsp minced green onion
1 Tbsp minced capers
1 Tbsp sweet relish
10 big basil leaves, chiffonade
zest of 1 lemon
Mix all ingredients, and let it set overnight. The basil flavor
infuses, and really intensifies the next day. Serve it with your
favorite fish and chips recipe.
Note: Salmon was battered in tempura, and served inside
a crusty, sourdough slider roll. It was dressed with a
mixture of watercress and micro-greens. It was also
served with a side of lemon basil tartar sauce, and a fried
basil leaf garnish.
